Man, breakfast-type meals just hit different, amir Man, breakfast-type meals just hit different, amirite?? 😳👌

I usually use scrambled tofu as an egg substitute but lately I’ve been diggin’ chickpea flour! It’s also high in protein, extremely satiating (great for a low calorie diet!), and has more of a fluffy, cakey texture that I really like. Just fix chickpea flour with water until it’s about the thickness of an uncooked, scrambled egg and then cook that bad boy up in a non-stick, oiled pan! I prefer to add turmeric, black pepper and black Himalayan sea salt.

For this meal in particular, I made a lil Tex-mex scramble! I scrambled the chickpea “egg” with black beans, spinach, mushrooms, and some vegan cheese, topped it with some salsa and served it alongside some avocado toast and potatoes, because potatoes are ALWAYS necessary 😉

My girlfriend and I are both working remotely still so we decided to travel a bit for at least a couple months while we work. Our first stay is near Asheville, NC, and ya know we had to hit up the local vegan donut options! 😂 Vortex Doughnuts has mostly all vegan donuts, although the few they have that include dairy are specifically marked as such, which made it very convenient. I’m a huge fan of plain, unglazed, old fashioned donuts. Like just the cakey stuff - no icing, glaze or anything. And I was stoked as hell to find out that they have vegan old fashioned donuts here and they are straight up the BEST old fashioned donuts I’ve probably ever experienced,  vegan or not! 

If you find yourself in the area definitely check them out and grab a box of those bad boys cuz they definitely be hittin’ different 😳👌
How does vegan jerky compare to beef jerky made fr How does vegan jerky compare to beef jerky made from a cow?

I used to love beef jerky before I cut out meat in early 2012. As I learned about the animal agriculture industry, the impact it has on the environment and more about nutrition in general, I made the conscious decision to cut that all out for the greater good than just my palette. Thankfully, in 2021, there are TONS of great vegan jerky options that come with none of the effects of animal agriculture. As a jerky junky, @jackandfriendsjerky are one of my current favorites so I decided to make a little comparison of the macros between the two. 

Jack and Friends jerky is made mostly from jackfruit with pea protein added for an extra kick of protein. It’s the first jackfruit jerky I’ve heard of and it tastes awesome while having the benefits of being made mostly from a nutritious whole food. In only 80 calories a serving, it packs 7 grams of protein, 1 gram of fat, 9 grams of carbs, 4 grams of fiber, no cholesterol of course and cruelty free. For the same serving size of beef jerky, it contains 80 calories as well, 10 grams of protein, 6 carbs, 1 fat, 0 fiber, 25mg of cholesterol, 200mg more sodium and it’s officially classified by the WHO as a definite cancer-promoting carcinogen along with other processed meats like hot dogs, deli slices and more. Why not give the cruelty free option a shot!

Things people have said to me in person over the y Things people have said to me in person over the years as a vegan lifter:

1.) Where do you get your protein?! (Most common)
My answer: Everything I eat but the staples are tofu, tempeh, seitan, vegan meat alternatives, and legume/legume based foods like bean pasta. This is usually followed by “Can you get enough protein from that?” or “What the hell is seitan/tempeh?” but by this time, I already faded into oblivion from protein deficiency and can’t answer anything else.

2.) I would go vegan but I could never give up (insert animal product here).
My answer: I thought the same thing and when I gave it a shot, I found that my cravings for those foods disappeared in only about a few weeks of not eating them at all!

3.) You’re vegan and into fitness? You must be so healthy.
My answer: *Too busy shoveling Ben and Jerry’s Non-dairy Cookie Dough in my mouth to respond*

4.) How do you get enough (inset micronutrient here)?
My answer: Fruits and vegetables are some of the most micronutrient dense foods on the planet! A lot of foods like plant based milks, cereal, nutritional yeast and more are also fortified with additional vitamins and minerals, including B12. If you’re concerned about a specific vitamin/mineral/other nutrient, take a supplement or look up specific foods that have it. After this, I pound a shot of sublingual cherry flavored Vitamin B12 and leave the bar. 

5.) Why are you vegan?
My answer: We don’t need to eat animal products to thrive in modern times so why continue to support a cruel industry that is also extremely harmful to the planet we live on? Oh and it’s just cool to know that I’m building my muscle fibers from literal broccoli and beans 😂
